Malabar spinach
This photo, released from the University of Florida’s Institute of Food and Agricultural Sciences, shows Malabar spinach microgreens ready for harvesting – Tuesday, May 13, 2008. Microgreens are vegetables grown under carefully controlled circumstances and harvested at a young age. Booming demand for such produce may be a boon for many of Florida’s small specialty farmers.
