Bigger Low-Carb Potato

Wayne Smith, left, president of the SunFresh of Florida Marketing Cooperative in St. Augustine, and Chad Hutchinson, an assistant professor of horticulture with the University of Florida’s Institute of Food and Agricultural Sciences, examine new, larger and tastier low-carb potatoes in a field near Hastings, Fla. — Wednesday, April 20, 2005. The new and improved low-carb potatoes, which will be available to consumers in May, follow the January debut of the nation’s first low-carb potatoes. The new variety has yellow flesh, and the original potato has white flesh.
